Today I thought of making Easy Chicken Fried Rice with the things that I have at home. I always thought you need a lot of prep for a fried rice, but it isn't the case. This time I only used the ingredients that was readily available.
So let's start, to be honest, this is a rushed blog, so don't have much to write before I start with the ingredients. Hence, straight to the point.
Ingredients:
Rice - 2 cups
Water - 3 - 3.5 cups
Carrot - 1
Beans - 1 cup
Boneless Chicken - few pieces
Ginger - 1 tbsp
Garlic - 1 tbsp
Onion - 1 medium
Egg - 2
Black Pepper - as per taste
Salt - as per taste
Soy Sauce - 1 - 1.5 tbsp
Spring Onions - optional
Oil
Method:
Chop carrot, beans, ginger, garlic and onions well
Marinate chicken in salt and black pepper. Fry them till done and chop it into bite size pieces.
Cook your rice and keep it aside to cool.
In a wok, take the remaining oil from chicken and add 2 tbsp oil. Heat it well and saute garlic till it is slightly brown from sides.
Add ginger and onion, let it cook for 2-3 minutes.
Add in the veggies and chicken, cook it for 3-4 minutes.
Move the veggies to one side of the woke and break open 2 eggs into the pan and scramble them.
Add in soy sauce, salt and black pepper.
Toss the cooked rice into the wok and mix well on high flame. Adjust the taste with extra salt, pepper or soy sauce.
Garnish with chopped spring onions if you have.
Serve it super hot and enjoy with a series or a movie of your choice. That will make for a good weekend for sure. For my vegetarian friends, replace chicken with mushroom or broccoli, or else add both together, yum!
