First things first, I can’t have a dull tasteless food just for the sake of reducing few pounds. So whenever I go for a healthy diet, I make sure that whatever I cook would keep me interested in continuing this process.
This time I thought of making use of Chicken and Broccoli. The recipe is super simple and you can make it in a batch and store it for later meals. Who has the time to make 2 separate dinner meal everyday, hence meal prep comes in handy.
Ingredients-
Broccoli - 1
Chicken breast piece - 1 (cut in cubes/strips)
Minced garlic - 2/3
Tomato paste / ketchup - 1 tbsp
Olive oil- 2 tbsp
Chilli powder - 1 tsp
Soy sauce - 1 tsp
Chilli flakes - 1/2 tsp
Black pepper powder - 1/4th tsp
Oregano / mixed herbs - 1/2 tsp
Salt - as per taste
Method-
In a pan, sauté garlic in olive oil.
Toss the chicken and slightly fry them. (add a little bit of salt)
Add in the tomato paste and mix well, if you don’t have tomato paste, add ketchup. It’s your dish, tweak it the way you like.
Add the chilli powder and mix well.
Add the boiled bite size broccoli.
Add the soy sauce and the other seasonings.
Stir fry it for 4-5 mins.
It’s that simple. Have it with a side of fruits or salad or just on top of some steaming hot brown rice or quinoa.
It’s quick and it’s healthy. 🏻
