Paneer Butter Masala

Paneer! Paneer! Paneer!

Though I love you to core, but you are one big thorn in my married life.


What will you do when you are a jeera and your partner is a mustard seed. I grew with a northern taste bud and my partner is a pure Naadan Chekkan (traditional Kerala guy).


In my attempt to rub off my paneer love on him, I have tried multiple versions of it. Somewhere I can't blame him as paneer was never part of Southern cuisine.


But, finally one hit home run and that was the easy Paneer Butter Masala. Trust me, seeing him eat paneer was the highlight of our married life (jk).


So, here it goes.


Ingredient:

  • Paneer

  • Onion - 2 medium

  • Tomatoes - 2 large

  • Green chillies - 3/4

  • Ginger

  • Garlic

  • Cashew nuts - handful

  • Butter

  • Coriander leaves

  • Red chilli powder

  • Turmeric powder

  • Coriander powder

  • Garam masala

  • Milk - 1/4th cup

  • Salt

  • Cloves - 3/4

  • Cinnamon - 1 stick

  • Bay leaf - 1

  • Cardamom - 3/4

Method:

  1. In a pan, saute all veggies (roughly chopped) and cashew nuts in oil.

  2. Once onion turn translucent and tomatoes melt, take them off heat. Let it cool and grind well.

  3. Heat some butter and oil in a pan, and add the whole spices. Let the aroma build.

  4. Add the blend and cook till the oil separates.

  5. Add 1 tsp red chilli powder, 1/4th turmeric powder, half tsp coriander powder, half tsp garam masala and salt to taste.

  6. Cook the masala well.

  7. Add some water and the paneer cubes. (This depends upon the consistency of the gravy you desire.)

  8. Add milk and cover. Let the paneer cubes absorb the goodness of the gravy.

  9. Top it with a good amount of chopped coriander.

There you have a Paneer Butter Masala that even an anti-paneer person would love. If, still they annoy you or throw tantrums, just ask them to eat the gravy and you have all the paneer. Hehe!
