These days everyone is busy with their lives, be it a house maker or a professional (this includes both men and women). We all have our priorities clear and no one wants to spend ample amount of their time in the kitchen when we can invest that excess time to develop ourselves.
I strongly believe that all humans should know how to cook, not to be an amazing home makers but just to survive. Not just cooking, we should know the basics of all house chores. Being independent means knowing how to take care of ourselves too.
Hence for all us busy bees, who want to eat home cooked food but hate to drain ourselves in the kitchen, here is a super simple one-pot recipe, One-pot Chicken Rice.
Serves: 4
Ingredients:
Chicken - 500 gm
Biryani rice / Jeerakashala rice - 2.1/2 measuring cup
Onion - 2 (large)
Tomato - 1 (large)
Green chilies - 5/6 (add more if you wish to spice it up)
Ginger - 1 tsp
Garlic - 1 tsp
Bay leaves - 1
Peppercorns - 6/7
Cinnamon- 1 stick
Cloves - 5/6
Garam masala - 1 tsp
Black pepper powder- 1 tsp
Salt
Oil- 1/4th cup
Water - 4 cups
Coriander leaves
Method:
In a pan, heat the oil and add the whole spices.
Add in the sliced onions and chilies, sauté them well.
Toss in ginger garlic with the tomatoes in to the pot and cook it till the tomatoes melt.
Add in the chicken and season it with salt, black pepper and garam masala. Cover the lid and let the chicken cook till it’s 3/4th done.
Add the water and let it bubble, add the washed rice.
Season it with salt and cover to cook on low heat.
Once done, sprinkle in a handful of chopped coriander.
The reason we add 4 cups water for 2 1/2 cup rice is because the chicken oozes out water, adding less water will prevent the rice from becoming mushy.
Serve it with a nice raita and let me know your feedback.
