Living in Dubai, I've heard a few times that chicken and chickpeas make a killer combination, as Middle East uses them in their cuisine quite often.
This led me to search for recipes on internet and I came across a recipe on Eatwell website. So, my next recipe is inspired by their chicken and chickpea stew but with spices that are readily available in our Indian kitchen, specially in my kitchen when I made this.
You'll be surprised of how these two condiments work so well together and in regret of not trying it earlier.
Ingredients:
Chicken 500 gms (boned/boneless)
Boiled chickpeas (1 to 1.1/2 cups)
Garlic
Salt
Lemon juice
Cumin powder (1/2 tbsp)
Chilli powder (1 tbsp)
Ground pepper (as per your taste)
Olive oil
Onion (1 large)
Tomatoes diced ( 2 large)
Oregano
Method:
Marinate your chicken in garlic, lemon juice, chilli powder and pepper. Let it rest for 30 mins.
Take the chicken pieces and shallow fry them in olive oil till it gets nice golden brown on its skin.
In a non-stick pan, saute onions in olive oil till golden brown.
Add chicken into the onion pan and let it cook well.
Add the tomatoes, chickpeas and the remaining marinade with salt.
Pour in a half cup of water if you want a bit curry like consistency.
Reduce heat and let it cook well.
Add in the oregano and fresh parsley if you have.
You can have it with Arabic flatbread or a hot bowl of couscous.
It's healthy and it's delicious for sure.
